KETO CHICKEN SALAD IDEAS
I am a huge fan of chicken salads! They are super easy to customize – just change the toppings, or add a different dressing. Most of my chicken salads are made with a combination of mayo and mustard mixed in with some fresh herbs.
In this recipe, I made a salad dressing out of mayo, sour cream, mustard powder, and fresh dill. That combination has some serious zip to it!
Here’s what you’ll need from the store to make this easy lunch idea (all the exact ingredient amounts are in the printable recipe card that is at the bottom of this post):
- 2 cans of chicken breast
- Celery
- Green onions
- Mayo
- Sour cream
- Mustard powder
- Fresh dill
- Dried cranberries
- Walnuts
- Pecans
- Almonds
- Tomato Basil Goat Cheese
This entire recipe is easy to change up. If you don’t like nuts, leave them out. I used flavored goat cheese because I like the taste of it. You can use plain goat cheese, bleu cheese, feta cheese, or leave it out entirely.
KETO CRANBERRY RECIPES
Cranberry is an iconic fruit to serve during the holidays. While cranberries by themselves are high in carbs and natural sugars, you can still sprinkle a few of them in your low-carb recipes. It’s all about how much you eat.
This cranberry arugula salad is fresh and full of flavor. You can also enjoy them in this keto cauliflower stuffing recipe. They add lots of flavor, vitamins, and nutrients to your recipes. If you are tracking your macros, just make sure you only use a few cranberries in each serving.
HOLIDAY CHICKEN SALAD
This is a great way to use leftover chicken. If you have leftover turkey, you can use that instead. All you have to do is chop up the leftover meat and mix it into the salad. It’s so easy (and helpful too!).
I used canned chicken because it’s a budget-friendly choice and I always have some in my pantry. In fact, you can use tuna instead of chicken if you have it in your pantry.
Add or remove ingredients that affect any allergies you or your family members might have. If you aren’t allergic to eggs, add a few hardboiled eggs to the salad. If you are allergic to nuts, just leave them out.
KETO MEAL PREP IDEAS
This recipe is an easy lunch or side dish. Serve it on a bed of lettuce for a really yummy salad idea with your dinner. Or, you can spread this salad out on some keto-friendly bread for a low-carb sandwich. It’s so delicious and easy!
You can also meal-prep with this recipe. Just make a bunch of it at the start of the week. Store it in individual meal-prep containers with a lid, and refrigerate them. They will last about 5 days in the fridge.

Celery chopped
Chopped green onions

Instructions:
1. Add all of the ingredients except for the goat cheese in a large mixing bowl. .
2. Mix until completely combined.
3. Crumble the goat cheese on top of the salad and serve.
