Mini Bacon Basil Tomato Bites

Can you believe summer is almost over? It seems like it was just Memorial Day weekend and now Labor Day is only a couple of weeks away. Every year it seems like summer flies by a little quicker.
Of course, my summer has been a little busy with moving to a new house along with all of the planning and festivities leading up to my daughter Kelly’s wedding last weekend. Which is probably why the summer has gone by so quickly!
The wedding ceremony and the reception were both beautiful. We couldn’t be more excited for Kelly. Her new husband is a wonderful man that we’re happy to call our son-in-law. He also has a wonderful family that we’ve been having a lot of fun getting to know.
Right after the ceremony there was a cocktail hour with several kinds of passed hors d’oeuvres. There were crab stuffed mushrooms, spring rolls and mini bacon basil tomato bites. They were all delicious, but I knew I had to recreate the tomato bites when I got home.
When I first saw these at the reception, I thought the filling was cream cheese of some sort, but quickly discovered it was a mixture of mayo and bacon. Once I tasted that, I was sold. It tasted just like a BLT!
Making these delicious little bites is actually very easy. It starts by slicing cherry tomatoes in half and scraping out the seeds. Then you mix together finely chopped bacon and mayo and spoon a little onto each tomato half. To finish everything off, thinly slice some fresh basil leaves and sprinkle over the top of each tomato.

- 20 cherry tomatoes
- 1/2 cup mayonnaise
- 2 slices cooked bacon, finely minced
- 1/4 tsp pepper
- 1 tbsp fresh basil
