Make and Mature Cake Recipe

Christmas season is here, and we bring to you the most popular Christmas recipe which has been a part of the festival's celebration since time immemorial. This traditional recipe is made with either rum or whisky and made at least 2-3 weeks before Christmas. 

The dried berries give it the perfect fruity flavour, while alcohol adds a strong aroma to it. The baking is done on comparatively lower heat for at least two hours. The name 'make and mature' itself suggests that you first need to make the cake and then let it mature till Christmas arrives. So, it is the right time to put on your chef's hat and prepare this delicious cake and let it mature until the right time, which is just two weeks away.

 Maturing the cake makes it even more delicious as the flavours are well absorbed in the cake. Make sure you try this traditional Christmas recipe and enjoy the festival.

Ingredients of Make and Mature Cake

• 150 gm all purpose flour
• 200 gm dried cherry
• 2 tablespoon orange zest
• 2 tablespoon lime zest
• 150 ml scotch whiskey
• 250 gm brown sugar
• 1/2 teaspoon baking powder
• 1/2 teaspoon powdered cinnamon
• 1 teaspoon vanilla extract
• 200 gm dried dates

• 200 gm dried figs
• 200 gm dried cranberries
• 1/2 cup orange juice
• 2 tablespoon juice of 1 lemon
• 250 gm butter
• 100 gm almond flour
• 1/2 teaspoon baking soda
• 100 gm flaked almonds
• 4 egg

• How to make Make and Mature Cake

• • Step 1 Set pan on medium flame

    To prepare this amazing Christmas cake, add dried cranberries, cherries, dates and figs in a bowl, along with lemon juice-zest, orange juice-zest, scotch whisky, butter and brown sugar in a pan. Mix well and set over medium flame.

  • Step 2 Boil the ingredients

    Mix everything lightly and let it come to a boil. Then let it simmer for 5 minutes more on low flame. Once done, set it aside.

  • Step 3 Preheat the oven

    Now, preheat the oven to 150 degree Celsius for 10 minutes. In a baking tin, lay a parchment paper and set aside.

  • Step 4 Prepare the cake batter

    In a separate bowl, add all purpose flour, almond flour, baking powder, baking soda, cinnamon powder, vanilla extract, flaked almonds, eggs and the previously prepared fruit mixture. Mix well until everything it combined.

  • Step 5 Bake the cake for 2 hours

    Now, pour the cake batter into the baking tin and bake at 150 degree Celsius for 2 hours.

  • Step 6 Poke some holes

    Once done, take the cake out from the oven and poke some holes in it using a toothpick. Pour 1-2 tbsp of scotch whisky over the cake and let it rest till completely cool.

  • Step 7 Store in an airtight container

    Once cooled down, cover the cake using a foil wrap and put it in an airtight container.

  • Step 8 Seasoning with alcohol

    Now, take it out every week till Christmas and add 2 tbsp of rum or whisky on the top and wrap again.

  • Step 9 Infuse the flavours

    You must make this cake at least two weeks before Christmas to infuse the right flavours in it.

  • Step 10 Some more alcohol

    Take it out one last time on Christmas eve, repeat the process of adding alcohol and wrap it again.

  • Step 11 Ready to be served

    On the day of Christmas, you can add icing on the top of your choice along with colourful sprinkles or chocolate chips and serve.
